The Barone d’Albius Rosato is produced exclusively from Nero d’Avola grapes, a variety cultivated in hilly vineyards.
It is a fresh, elegant and pleasant wine.
100% Nero d’Avola
This grape variety is characterised by a medium-early maturity, occurring in the first week of September.
Only when the grapes are perfectly aromatic and have reached a full polyphenolic maturity, they are harvested, destemmed and cooled at 12°C. After 8-10 hours, the must is extracted and fermented with selected yeasts at a controlled temperature of 16-18°C. Then filtration, stabilisation and bottling follow.
Only grapes cultivated at 200-300 meters above sea level are selected, where the sunlight is not too intense and the wine gains a fresh and fruity taste. The preferred training system is the trellis, with an average density of 4,500 vines per hectare.
Excellent as an aperitif, it is a perfect accompaniment to delicate starters with fish and vegetables, as well as light dishes with white meat and steamed fish.
Ideal with slightly spicy ribbon noodles with prawns, clams and cherry tomatoes.
